no. 3 – christmas eve baking

I did some baking this morning – I made two batches of pumpkin muffins (one gluten and dairy free, the other with wheat and milk) and two loaves of gluten-free yoghurt bread.

I used this recipe for the bread and this recipe for the muffins. I substituted coconut oil for vegetable oil in both batches of muffins, and in the batch of gluten/dairy free muffins, I used almond milk and Bob’s Red Mill Gluten Free All-Purpose Baking Flour instead of regular milk and all-purpose wheat flour.

and then I ate brunch - yoghurt and bananas, both a regular and a gf muffin, and ginger tea - YUM!

no. 2 – ginger tea, popcorn and groceries

I’ve been spending this Christmas break at home with my parents in Iowa – relaxing, sleeping in and tagging along with Mom and Dad on all their various adventures. It’s been nice. Today I spent most of the day helping mom cook dinner and clean the house for some guests who came over for dinner, but during some down time I made myself some ginger tea and stove-popped corn and ran to the grocery store to pick up some ingredients for some baking I’m hoping to do tomorrow (these muffins and this bread!).

This was the first time I ever made fresh ginger tea on the stove. Mmmmm, so good!

no. 1 – welcome (back)

Hmmm, it’s been a long time since I last wrote…. Well, welcome to those of you who are new, and welcome back to my returning readers. I’ve been updating this blog on and off for over four years now (mostly off), so if you’ve stuck with me for this long – kudos. You’re either a really good friend or a crazy person. Hopefully the former.

I’ve gone ahead and hidden all of my old posts to give myself a fresh start with this blog. Less guilt for not writing regularly that way. Also less embarrassment. I was a pretty stuck-up, opinionated kid. Probably still am. I’m working on that.
